Let me clue y'all in on one of my favorite items for breakfast - chia seed pudding. I initially tried it at First Watch, but I had seen a ton of recipes for it on Pinterest so I decided to give it a whirl and y'all, it is so easy. This is just a basic, standard recipe for chia seed pudding. I usually make a batch of it on Monday and eat it throughout the rest of the week. There are so many ways to garnish and top your chia seed pudding with your favorite granolas and fruits, but I stuck with the traditional red, white, and blue for this patriotic creation.
The Fourth of July has always been one of my favorite holidays. When I was younger all the neighborhood families used to go to decorate bikes and wagons and parade down to the park nearby behind a firetruck. It was so much fun and it always ended in bomb pops for breakfast!
Although I am a little old for the neighborhood parade, I still enjoy getting in the spirit by making red, white, and blue food. This summer especially has been crazy busy and stressful, but luckily this recipe is easy, quick, healthy, and perfect for the Fourth of July.
Patriotic Chia Seed Pudding
Chia Seed Pudding - time 1 hour
4 cups of full-fat coconut milk
8 tablespoons of chia seeds
4 teaspoons of vanilla extract
Agave nectar to taste
1. Combine the coconut milk and chia seeds in a large bowl and mix thoroughly to ensure there are no chia seed clumps.
2. Add the vanilla extract and agave nectar and mix well.
3. Place on the refrigerator for at least an hour to stabilize the chia seed pudding mixing occasionally to avoid chia seed clumps.
Patriotic Chia Seed Pudding - 5 minutes
1/2 cup of chia seed pudding
4 large cut strawberries (or more)
1/4 cup of blueberries (or more)
2 tablespoons of shredded coconut (or more)
Agave nectar
1. Place the chia seed pudding at the bottom of a bowl or mason jar.
2. Place the strawberries, blueberries, and coconut however you would like!
3. Top with agave nectar and enjoy!
Feel free to add granola, bananas, raspberries, or whatever else you can think of to make your chia seed pudding even more festive.
